BELAZU Ingredient Co.'s Truffle & Artichoke Pesto is a blend of Italian black summer truffles, artichokes from Puglia, and aged Parmigiano Reggiano -- An indulgent twist on an Italian classic.
The black summer truffles used in this pesto are produced in Alba, Northern Italy. Truffles are a spontaneous fungus that grow underground, taking nourishment from the roots of nearby trees. Highly skilled dogs, that have developed a particularly heightened sense of smell, hunt for the truffles in the dead of night, maintaining the secrecy of where the precious truffles are found. These truffles add a rich depth of flavor and indulgence to the pesto.

CURATOR'S NOTE:
Native to the Mediterranean, the artichoke is actually the edible flower bud of a thistle plant in the sunflower family. In fact, if left to develop, the artichoke will blossom into an extraordinary, spiky, brilliant purple flower.
Artichokes are one of the oldest known foods, dating to antiquity. According to legend, when Zeus spotted Cynara, a beautiful young mortal, he transformed her into a goddess. Homesick, Cynara sneaked back into the mortal world. When Zeus discovered her deception, he turned her into an artichoke. The artichoke's scientific name, Cynara scolymus, reflects this story.
