DIRECTIONS
In a medium sauce pan, boil one cup water. Add 1/4 cup grits and reduce heat to low. Simmer, stirring frequently until creamy and tender, about 20 minutes. For a creamier texture, add additional water. Serve immediately.

CURATOR'S NOTE:
"The Low Country" can mean different things to different people, but technically it refers to a geographic region spanning from Georgia’s Savannah River all the way up north to the Pawleys Island area in South Carolina. It is approximately an 80 mile stretch of low-elevation land, and is known for features like salt marshes, moss-draped oaks, and old plantation homes... and of course, its cuisine.
Because the Low Country lies on a coastal region, it is no surprise its cooking uses lots of seafood such as shrimp, oysters, clams, crabs, lobster, fish, etc. the coastal region of Georgia and South Carolina is also known for agricultural goods such as vegetables, fruits, rice, and corn -- the perfect setting for local favorites such as grits, and some serious spice!
A few Pro-Tips: For creamier results, use milk instead of water. For thinner grits, use a bit more water. For thicker, creamier grits, cook longer.
